I wasn't sure how this will turn out. Plantain was never on my "to try" recipes, but I couldn't resist making this one. It is so healthy, gluten free and high in protein. You will not miss the flour in this recipes.
Ingredients1 green/yellow plantain
1 tsp baking soda
1 tsp vanilla extract
1 tbsp chia seed
2 tbsp hemp protein powder
1 tbsp plain yogurt (Optional or substitute with 1 tbsp liquid coconut oil)
Mix all ingredients together in a blender and use 1/4 measuring cup to scoop the batter into the pre-greased hot pan. I used a mixture of coconut oil and butter. Wait until the pancake starts to bubble, then flip and cook for another 2 min or until golden brown. These pancakes have green hue in them from hemp protein powder. Serve with maple syrup for extra deliciousness.
